From left to right in that photo: Apple Crisp Ale, Belgian Blonde Ale, and Chocolate Maple Porter. We bottled the porter last night. We'll bottle the blonde ale this weekend. We brewed the apple crisp ale last weekend, so that will ferment for 2 or 3 weeks.
Ideally, we like to give the beer two weeks in the bottle before drinking, but we always test one after 5 to 7 days in the bottle. So a couple of these beers will be a bit under-aged when we try them around the holidays, but I think that they'll taste okay.
Last night after bottling, we tasted some leftover porter, and we were pleased with it. The blonde ale wort tasted good on brewing day, so we're hopeful for that one.
They don't always work out. Last Saturday, we dumped about 90 bottles of our beer down the drain. They were five gallon batches of a Belgian Wit brewed in July and a Belgian Trippel brewed in August. We gave them time, but the flavors were still way off. We enjoyed the one-gallon versions of these beers, so we obviously fouled-up something during our five-gallon processing.
