Sunday afternoon and evening, I shucked corn and grilled corn, peppers, and onions. DD did the rest, which was a lot: preparing jars, slicing and roasting tomatoes, mixing, cooking, canning, etc. The final product was 29 pint jars of corn salsa. One casualty. A jar with contents broke at the end.
Roasted Corn Salsa
Makes 12-14 pints
18 ears fresh sweet corn, husks removed
7 1/2 lbs tomatoes
2 large red onions
2 poblano peppers
2 red bell peppers
2 green bell peppers
6-8 jalapeno peppers
5 garlic cloves, pressed or minced
3 1/2 cups vinegar
2/3 cup lime juice (freshly squeezed, ideally!)
1 1/2 cups granulated sugar
1 Tbsp salt
1 bunch cilantro, chopped (about 1 cup)
We did a double batch.
Prior to grilling, the produce was brushed with olive oil.

Once everything is cool, chop up the peppers and onion, and use a sharp knife to remove kernels from the corn. Add all roasted vegetables to a large pot, alone with garlic, vinegar, lime juice, sugar, and salt, stir well.
Heat to a boil, then reduce heat and simmer until liquid reduces a bit, and mixture reaches a consistency you like. Stir in the cilantro, if using, and cook for one more minute.
Ladle into hot, sterilized pint sized canning jars. Affix sterilized lids and rims, and process in a hot water bath for 15 minutes. (Add 5 minutes for altitudes above 1,000 feet; add 10 minutes for altitudes over 6,000 feet.) Allow to cool overnight.

I'll use this thread today to take notes about our salsa canning and the browns ravens football game and the weather.
Today's weather is breezy with a mostly cloudy sky and temps in mid 60s at 1pm. I think temps have fallen some since this morning. Winds are westerly at over 20 mph. May have been a good day at Magee Marsh for migrating songbirds.
End of first qtr. Browns lead Ravens 7-3. Bal got ball first and drove for FG. Then Cle drove 80 yards in 11 plays for TD on its first poss.
I'm shucking corn outside while listening to Browns game. I grilled black bean burgers and ate them with tomatoes from our garden and Deb's homemade canned ketchup.
At half Bal led 10 to 7.
Cle got ball first to start second half and Browns drove 80 yards for TD. Then Bal followed with a long TD drive. Bal leads Cle 17-14.
Browns next drive starts on own 20. First play is pass that gains 29. Next play is a run that gains 22. Cle has a nice two-man running game. Next play, cle got cute with a reverse that lost 10 yards. Back to 39 of Bal. Next play is pass that gains 9. Third and 11.
Third down play is pass that gains 12 on third and 11. Cle crowd is rocking today. Next is a run to West that gains 8. Both main RBs are rookies.
Cle now first and goal at Bal 7 or so. The running game brings back memories of Mack-Byner.
Cle eventually punches it in. Hoyer TD pass to Austin. Cle nearly fouled up with a shuffle pass to TE Cameron. Too cute. Cle does not need cute. That was another 80 yard TD drive. Cle leads 21-17. 0:13 secs left in third qtr. Hoyer is 17-19 passing!
Bal first play on next poss Flacco overthrew an open Wr deep down field who beat rookie DB Gilbert. Next play Cle hit Flacco popping ball up and Cle intercepted and returned to Bal 29. Cle went three and out and missed FG.
Drank some bourbon while shucking and now I'm drinking a little German beer while grilling corn.
After cle missed FG, bal drove and went for it on 4th and under one and Cle stopped Bal run attempt. Cle took over on own 20.
And now cle compl a big pass play, approx 70 yards. First and goal at Bal 9.
Scattered squally showers moving thru area.
Cle lost a yard on first down with a run. Then cle lost six yards on next play. Third and goal from 16 and Hoyer compl TD pass but he went over line of scrimmage. May have confused 16 with 11 yard line. Cle attempted FG but Bal blocked it.
5:56 left and Bal driving. Cle leads 21-17.
Pass interference on Gilbert at five yard. Then 12 men on field on cle. First and goal for bal at cle 2.5 yard line. Run gets zip. Then inc pass. Third and goal around 3.
Inc pass and now bal will attempt FG on fourth and goal at three. It's good - a 21 yard FG. On last drive bal skipped FG attempt of around 37 yards.
Of course cle botched two FG attempts. Cle should have at least 27 if not 31 points.
Just over 5 min left. 21-20 cle. But cle goes three and out and used only 37 seconds. Good punt. 48 yards. No return. Bal starts on own 25. Over 4 min left.
This is game cle should have had wrapped up now.
Holding on Haden. 12th penalty on cle. But now bal has third and 16 and pass inc.
Flag and it's on bal ... Pass int on bal. 4th down and bal punts. Wow. Strange calls in 4th qtr by bal coaches. Punt not caught by Benjamin and ball rolls to cle 7. 58 yard punt. Two timeouts and two min warning left for bal.
Third and 6 for cle.
Inc pass. Cle punts. 2:05 left.
Fair caught punt at bal 49. And now two min warning.
Bal at cle 12. Pass burned Haden.
Four seconds left and bal makes short FG and wins. Bal had no business winning that game but bal players and coaches took advantage of cle mistakes on offense
Defense played well enough to win. Offense failed to put game away in 4th qtr.
Light rain falling while I'm grilling. Standing in rain drinking bourbon again. Wearing shorts, Birks, and rain coat.
Temps in low to mid 60s at 4pm and still breeZy.

At 5:13 pm nearly done grilling. Finishing up with onions. Takes a while to grill corn. Grilled peppers second. Peppers grill quick. Grilling on high on all burners.

While I grilled the bean burgers and shucked corn, the AT&T service man repaired our phone line that was disconnected for some unknown reason at midday on Friday.
I should have asked the name of this AT&T guy. He was nice. We chatted for a good bit about NASCAR, canning, and other things.
