Country Living Fair - Autumn Soups - 2013

This content is created from notes taken at the 2013 Country Living Fair in Columbus, Ohio. Two soups made during the demonstration: tomato and garlic.Making crackers was also demonstrated.

Tomato Soup

Plum tomatoes or beefsteak or Roma.
Qtred.
4lbs.
Coarse sea salt.

Sprinkle salt on tomatoes.
Teaspoon dried oregano and thyme.
3 tablespoons olive oil
3 tablespoons balsamic

Oven 350 - 400 for 40 min

No parcemt paper

While tray in oven for 40 to 60 min.
Prepare in a pot melt butter stove top.

Pot with butter add chopped onions

Oregano for pot chopped

Pot butter onions oregano and add oven roasted tomatoes.
Cool five min on stove top .
Add chicken broth.
Purée with single element hand mixer or with food processor.

Crackers

Make cracker in food proc.
flour .
Tsp cay pepp .
Fine salt.
Grated sharp cheddar .
Butter.

Pulse food proc.
add water .
Pulse until con wet sand .
3 table spoon water.

Place cracker dough on parch paper.
One big ball.
Shape into log.

Leave dough a little crumblr.
Roll log in papper.
Place in frig

Cold cracker dough log easy to slice thin.
Place on baking sheet.

Bake with 400 degrees for 8 to 10 min

Garlic Soup

Pot melt 3 tblsp butter .
Onions .
Cook while roasting garlic.
One onion for both soups .

Roasting garlic.
3 heads garlic. Cut in Half.

Foil.
Bay leaf. Olive oil. Wrap up with two foil pieces
