Country Living Fair - Autumn Soups - 2013
This content is created from notes taken at the 2013 Country Living Fair in Columbus, Ohio. Two soups made during the demonstration: tomato and garlic. Making crackers was also demonstrated.
Crackers
Make cracker dough in food processor.
One cup all-purpose flour.
4 tablespoons butter.
8 ounces grated sharp cheddar cheese
1 teaspoon cayenne pepper.
Fine grain sea salt (how much?).
Pulse ingredients in food processor.
Slowly add water while pulsing.
Pulse until consistency of wet sand.
Add approximately 3 tablespoons of water.
Leave dough a little crumbly.
Place cracker dough on parchment paper.
One big ball.
Shape into log.
Roll log in paper.
Place in frig.
Cold cracker dough log easier to slice thin.
After dough has chilled for how long?
Slice and place on baking sheet.
Bake at 400 degrees for 8 to 10 min until some browning.
Roasted garlic
(to be used with garlic soup)
3 heads garlic cut in half.
Place garlic halves onto tinfoil.
Add a few bay leaves (how much?).
Add 3 tablespoons of olive oil.
Garlic and above ingredients sandwiched between two pieces of tinfoil.
Foil sealed along edges.
Bake in oven at 350 degrees for 60 min.
Let garlic cool.
Squeeze garlic into a separate bowl.
Want garlic pasty.
Sausage Garnish
(to be used with garlic soup)
Pan on stove.
Tereso sausage .
Hard cured sausage .
Sliced thin.
Sausage in pan with olive oil .
Simmers on low for a few min to obtain a little browning.
Add sausage oil to garlic soup top. ??
Tomato Soup
4 pounds of plum, beefsteak, or roma tomatoes.
Quarter tomatoes.
Place on baking sheet.
Sprinkle coarse sea salt onto tomatoes.
Sprinkle teaspoon dried oregano onto tomatoes.
Sprinkle teaspoon thyme onto tomatoes.
Drizzle 3 tablespoons olive oil onto tomatoes.
Drizzle 3 tablespoons balsamic vinegar onto tomatoes.
Bake in oven at 350 to 400 for 40 min
No parcemt paper
While tray in oven for 40 to 60 min.
Prepare in a pot melt butter stove top.
Pot with butter add chopped onions
Oregano for pot chopped
Pot butter onions oregano and add oven roasted tomatoes.
Cool five min on stove top .
Add chicken broth.
Purée with single element hand mixer or with food processor.
For tomato soup purée in food process .
Add cream some point.
Once puréed soup is done .
Qtr cup cream added to each soup.
Soups use heavy cream
Garlic Soup
Pot melt 3 tblsp butter .
Onions .
Cook while roasting garlic.
One onion for both soups .
Add roasted garlic to pot of onions etc.
add tsp paprika.
Add sprig thyme to pot garlic soup.
Add chicken broth.
Entire carton (how man ounces?)
Simmer for 20 min
Back to garlic soup purée too.
Single hand mix tool.
(Can add one large potato to pot with onions part.)
Qtr cup cream added to each soup.
Soups use heavy cream
